Doggie birthday cupcake recipe
 
Peanut Butter Carrot Cupcake
with cottage cheese frosting



Daisy turned 1 year old during her stay here at Home Away From Home K9 Care so I decided to make the day a little special by baking her a birthday cupcake. She thought it was a great idea! The recipe is below:







(recipe makes 6-8 cupcakes)

1 egg
1/4 cup peanut butter
1/4 cup cooking oil
1 tsp vanilla extract
1/3 cup honey (optional)
1 cup shredded carrots
1 cup whole wheat or white flour
1 tsp baking soda
   nonfat cottage cheese + a few shredded carrot pieces

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease & flour cupcake mold
2. Combing egg, peanut butter, oil, vanilla and honey (if desired) in a large bowl; blend well. Stir in the carrots and mix thoroughly. Sift together the flower and baking soda and fold into the carrot mixture. Spoon cupcake batter into mold.
3. Bake in preheated oven for about 30-35 minutes. Let cool in pan for about 10 minutes; then turn out onto a wire rack to cool completely.
4. Once fully cooled frost with cottage cheese and sprinkle with shredded carrot. Put back in fridge for a few minutes.
